Olivares de Altomira is a family-run olive oil mill located in the small town of Vellisca, in the Alcarria region of Cuenca, where we are passionately dedicated to the production of Organic Extra Virgin Olive Oil (EVOO). Our oil has a Protected Designation of Origin (PDO), which guarantees its authenticity and quality. We also promote olive oil culture through olive oil tourism experiences, bringing our visitors closer to the fascinating process of extra virgin olive oil production.

Our project

Olivares de Altomira was founded with the goal of producing high-quality, organic EVOO, valuing the area's natural resources and promoting sustainable development in a region facing depopulation.

We are a family business with a long history in agriculture, driven by enthusiasm, perseverance, and teamwork.

We are located in Vellisca, a village in the Alcarria region of Cuenca, located at the foot of the Altomira mountain range, in a protected natural setting.

The olive groves

Organic olive groves by tradition

The name of our oil is a tribute to our beloved mountain range. Our olive trees are scattered in small plots immersed in the protected natural area of the Sierra de Altomira, among thyme, juniper, rosemary, oak trees, and other vegetation that has maintained its natural environment unchanged for centuries.

In 2010, Olivares de Altomira undertook a project to restore centuries-old olive groves that had been abandoned in recent decades as a result of the region's gradual depopulation.

Environmental sustainability

We work respectfully for a traditional farming system inherited through generations, thus ensuring environmental sustainability and the rich biodiversity of our mountains.

We continue to preserve the way of working the land inherited from past generations, and we have not changed the centuries-old way of life of the olive grove: we till the soil, we collect its fruit and we prune after the harvest, always without artificial irrigation or any chemical treatment, as has been traditionally done.
